- 1 beef tenderloin medallions, 1.5 inch thick
- 1 slices thick-cut bacon
- coarse salt
Instructions

Wrap each medallion with a slice of bacon around the edge. Secure with a toothpick.

Season the top and bottom with salt.

Cast iron on high. Sear top and bottom 90 seconds each.

Sear the bacon-wrapped edges by rolling the medallions for 2 minutes total.
