  • 1 beef tenderloin medallions, 1.5 inch thick
  • 1 slices thick-cut bacon
  • coarse salt

Instructions

    Wrap each medallion with a slice of bacon around the edge. Secure with a toothpick.

    Season the top and bottom with salt.

    Cast iron on high. Sear top and bottom 90 seconds each.

    Sear the bacon-wrapped edges by rolling the medallions for 2 minutes total.

    Transfer to 400F oven for 6-8 minutes until internal hits 130F.

    Rest 5 minutes. Remove toothpicks before serving.
