- 0.75 lb bone-in beef short ribs
- 0.5 tsp coarse salt
- 0.25 tsp black pepper
- 0.5 tbsp tallow or butter
- 0.38 cups beef bone broth
Instructions

Season ribs with salt and pepper. Let sit 20 minutes.

Oven to 300F. Heat tallow in a dutch oven over high heat.

Sear ribs on all sides, about 2 minutes per side. Work in batches to avoid steaming.

Pour in broth. It should come halfway up the ribs.

Cover. Oven for 3 hours until the meat pulls away from the bone with light resistance.

Rest 10 minutes. Spoon pan juices over when serving.
