- 0.5 NY strip steak, 1.25 inch thick
- 1.5 tbsp unsalted butter
- coarse salt

Salt the steak 20 minutes ahead. Rest at room temp.

Cast iron on high until smoking. Add steak. Sear 2 minutes, do not move it.

Flip. Add butter to the pan.

Tilt the pan toward you. Spoon foaming butter over the steak for 90 seconds. Keep it moving.

Pull at 130F internal for medium rare. Rest 5 minutes. Pour remaining pan butter over the top when serving.
