  • 0.25 lb beef heart, trimmed of fat cap and valves, cut into 1 inch cubes
  • 0.5 tbsp tallow or butter, melted
  • 0.25 tbsp coarse salt
  • 0.25 tsp black pepper

Instructions

    Toss heart cubes with melted tallow, salt, and pepper. Let sit 30 minutes.

    Thread onto skewers, 5-6 cubes per skewer.

    Grill or grill pan on high. Sear each side 90 seconds, 4 sides total.

    Pull at medium rare. Heart toughens fast when overcooked. Rest 3 minutes.

    Finish with flaky salt. Eat straight off the skewer.
