  • 2 lamb loin chops, 1 inch thick
  • coarse salt

Instructions

    Pat chops dry. Salt both sides. Rest 20 minutes at room temp.

    Grill on high heat. Clean grates, no oil on the chops, they have enough fat.

    Grill 3-4 minutes per side for medium rare. Stand chops on the fat cap for 30 seconds to render.

    Pull at 135F internal for medium rare. 140F for medium. Rest 5 minutes.

    Finish with flaky salt. Eat with your hands.
