- 2 lamb loin chops, 1 inch thick
- coarse salt

Pat chops dry. Salt both sides. Rest 20 minutes at room temp.

Grill on high heat. Clean grates, no oil on the chops, they have enough fat.

Grill 3-4 minutes per side for medium rare. Stand chops on the fat cap for 30 seconds to render.

Pull at 135F internal for medium rare. 140F for medium. Rest 5 minutes.
