Scaled to 1 serving (0.5x)

  • 1 whole mackerel, gutted and scaled, about 1 lb each (Or 4 fillets if you prefer)
  • coarse salt

Instructions

    Pat fish dry inside and out. Score the skin in 3 diagonal slashes on each side for whole fish.

    Salt heavily inside and out. Let rest 15 minutes.

    Grill on high heat, grates cleaned and oiled.

    Grill 3-4 minutes per side for whole fish, 2-3 minutes per side for fillets.

    Fish is done when flesh flakes with a fork at the thickest part. Serve immediately.
