- 0.5 racks baby back ribs
- 0.5 tbsp coarse salt
- 0.25 tbsp black pepper
- 0.25 tbsp paprika
- 0.25 tsp garlic powder

Remove the silver membrane from the bone side. Lift an edge with a butter knife, grab with a paper towel, peel.

Mix rub. Coat both sides. Let sit 30 minutes.

Oven to 275F. Wrap each rack in 2 layers of heavy foil, sealed tight.

Bake on a sheet pan 2.5 hours. Open the foil, drain any liquid.

Return ribs uncovered. Crank to 425F. Bake 15 minutes for a dry crust.

Rest 10 minutes. Cut between the bones.
