  • 0.5 lb brisket flat
  • 0.38 tbsp coarse salt
  • 0.25 tbsp black pepper

    Mix salt and pepper. Coat the brisket heavily on all sides. Let sit 30 minutes.

    Oven to 225F. Place fat side up on a rack over a sheet pan.

    Bake uncovered 8-10 hours. Start checking at hour 8. It is done when a probe slides into the thickest part with no resistance (internal 203-205F).

    Wrap in foil or butcher paper. Rest in a cooler or turned-off oven for 1 hour.

    Slice against the grain in pencil-thick slices. The grain changes direction in the point if you have a whole packer cut.
