  • 4 fresh sardines, gutted and scaled
  • 1 tbsp butter
  • coarse salt

Instructions

    Pat sardines dry. Season with salt inside and out.

    Heat butter in a cast iron over medium-high until foaming.

  3. 3

    Add sardines. Cook 2-3 minutes per side until skin is golden and flesh is just opaque.

    Baste with pan butter during the last minute.

    Eat with your hands. The small bones are edible and soft.
