  • 1 beef marrow bones, split lengthwise (Ask the butcher to saw them)
  • coarse salt

Instructions

    Soak bones in cold salted water 1 hour to pull out blood. Change water once.

    Pat dry. Oven to 450F.

    Place bones marrow-side up on a sheet pan. Sprinkle salt over the marrow.

    Roast 15-20 minutes until the marrow is bubbling and golden but still holds shape. Do not overcook or it liquefies.

    Cool 3 minutes. Scoop marrow out with a small spoon.
