Scaled to 1 serving (0.25x)

  • 0.5 lb tri-tip roast
  • 0.75 tbsp coarse salt (Kosher or flake)

    Coat the tri-tip in salt 1 hour ahead. Leave it out.

    Oven to 425F. Sear the roast in a cast iron 3 minutes per side, including the fat cap.

    Transfer to oven. Drop heat to 325F. Roast until internal hits 128F for medium rare, about 25-30 minutes.

    Rest 15 minutes, tented in foil. This step is non-negotiable.

    Identify the grain. Slice thin against it. The grain changes direction halfway through the roast.
