- 1 ahi tuna steaks, 1 inch thick, sushi-grade (Buy from a trusted fishmonger. Must be labeled sushi or sashimi grade for safe rare consumption.)
- 0.5 tbsp tallow or butter
- coarse salt
- black pepper

Pat steaks bone-dry. Season all sides with salt and pepper.

Cast iron on very high until smoking. Add tallow.

Lay tuna in the pan. Sear exactly 45 seconds. Do not move it.

Flip. Sear 45 more seconds. Stand steaks on each edge for 15 seconds each to sear the sides.

Transfer to a cutting board. Slice against the grain in 1/4 inch slices immediately. The center should be cool raw ruby red.
