Ingredients

  • 6 oz sirloin steak, 1 inch thick
  • 2 eggs
  • 1 ripe avocado, sliced
  • 1 tbsp butter
  • coarse salt

Instructions

    Salt the steak and rest 15 minutes.

    Cast iron on high. Sear steak 2-3 minutes per side for medium rare (130F internal). Transfer to a plate, rest.

    Drop heat to medium. Add butter to the same pan.

    Crack eggs into the butter. Cook to your preferred doneness, 3 minutes for runny.

    Halve the avocado safely on a cutting board (not in your hand). Scoop out the pit with a spoon. Slice the half.

    Slice steak against the grain. Plate with eggs and avocado. Salt everything. Serve.
